When anyone says  Rabri / Rabdi ,the scrumptious dessert comes in front of eyes. It’s so delicious that no one can refuse to eat it.  There is nothing better than having creamy , rich dessert rabri in earthen pots. I am big fan of all types of Rabri and love to eat saitaphal Rabri the most.

Rabri is made by reducing full cream milk  on low flame. It takes time and efforts to make rabri. I have posted here Saffron khoya  rabri recipe which is quick and hassle free.Just follow the step by step process and fail proof Saffron khoya  rabri will be ready in few minutes. Generally rabri takes more time to make as milk needs to be reduced by simmering it on low flame, but this Khoya  rabri is quick as mawa /khoya is added in semi thickened milk for making rich ,creamy dessert. Only precaution is make sure you are using soft khoya for making rabri as it incorporates in thick milk easily. Try making this khoya rabri and let us know the feed backs in comments section.

Ingredients

  • Milk  1  litre
  • Khoya 1 cup
  • Sugar 1 cup
  • Almonds 8-9 pieces
  • Saffron strands 7-8
  • Cardamom powder 1 pinch

Directions

  1. Bring milk to boil in thick bottom pan and keep on stirring it for reducing it.Make sure to keep flame very low after boiling it.
  2. Soak almonds for 5-6 hours in water and peel covers of almonds and grind them to make a almonds paste.
  3. Saute khoya / mawa in thick bottom pan for 5-6 minutes on low flame.
  4. Knead it with hands to get more softer khoya  as it gets incorporated in milk easily.
  5. After stirring milk for about 20 minutes add soft khoya in it and mix well.
  6. Add sugar , almond paste and sprinkle cardamom powder on rabri and mix well.
  7. Let the khoya rabri boil and switch off gas
  8. Garnish khoya rabri with saffron strands, cut dry fruits and serve warm or chill.
