I absolutely love all one pot meal ideas as meal gets ready in only one step. Vegetable pulao and any choice of raita is our family favourite meal. I keep on experimenting with vegetable pulao for making it interesting for kids.Vegetable Pulao is spicy rice dish cooked with vegetables and spices. Any choice of vegetables can be added in vegetable pulao to make it nutrition packed rice. Whole spices  are used to make pulao full of flavours.

Today’s post is vegetable pulao recipe in restaurant style. Vegetable pulao can be cooked using pressure cooker in faster way. But for cooking restaurant style pulao it is cooked in open vessel ,which is latter mixed with fried vegetables. Try this receipt and let us know how it turned out in comments section.

Ingredients :

  • Basamati rice  2 cups
  • Paneer/cottage cheese cubes 1/2 cup optional
  • Onions 2
  • Carrots 1
  • Beans 3-4
  • Green chili 2
  • Coriander leaves small bunch
  • Ginger small piece
  • Garlic 4-5 cloves
  • Ghee 2 tb spoon
  • Cardamom 2
  • Bay leaf 3-4
  • Salt as per taste
  • Cinnamon sticks 1/2 inch
  • Cashews 2 tb spoon
  • Cloves 3-4
  • Water

Directions to Cook :


Wash and drain water from Basamati rice.

Soak  rice in water for 25 minutes.

Heat ghee in a pan.

Add cumin seeds and after they crackle add all dry spices in ghee. Saute till nice aroma comes from it.

Add onions in it and saute till onions get golden brown.

Add paneer cubes and saute for a minute.

Grind ginger , garlic ,chili ,coriander with some water in grinder to get paste.

Add this paste in pan.

Add all chopped vegetables (Couli flower ,mutter, green beans) in pan and saute for 3-4 minutes on low flame.

Drain water and add soaked basmati rice in pan and saute mixture for 1 minute.

Add water double the quantity of rice in pan for cooking pulao.

Add salt as per taste , lime juice and mix well everything.

Cook vegetables pulao for 14-15 minutes or till it get cooked.

Vetable pulao is ready and serve with any choice of raita.
