Whenever I am upset or sad I head towards my kitchen. Kitchen is the most favourite place and where I could be only me. Experimenting with foods and serving it to kids is what I find very threptic and anti-depressant for me. It’s been said that eating your favourite foods makes your brain secret endorphins and make you happy.
Yesterday for the lunch I made this rich, creamy, delicious paneer curry – paneer butter masala. Cottage cheese cooked in creamy, sweet gravy to make this luscious paneer butter masala. My kids absolutely lick their finger when I make this curry for their meals. It goes well with anything accompanying it. Try this recipe and let us know the feedbacks in comments.
Paneer cubes(Cottage cheese) 1 cups
Tomato chopped 3 big size
Onions chopped 2
Ginger small piece
Garlic cloves 3
Cashews 2 tb spoon or 12 -14
Butter 4 tb Spoon
Sugar 1/2 tea spoon
Chili powder 1/2 tea spoon
Coriander powder 1/4 tea spoon
Cumin seeds powder 1 tea spoon
Bay leaf 4
Water 2 cup
Salt as per taste
Directions to Cook :
Fry Paneer:Shallow fry /deep fry paneer cubes in oil or butter.
For making gravy:
Fry chopped onions in some oil and Keep it aside.
Add chopped tomatoes in pan and saute it.
After it gets cool grind fried tomatoes ,onions with water to get fine puree.Keep it aside.
Heat kadhai /pan and add butter in it.
Add cumin seeds, pinch of asafoetida in oil.
After cumin crackles add dry spices ,cardamoms ,cloves and bay leaves in it and saute.
Add ginger ,garlic paste in pan and saute.
Add onion and tomato puree in pan. Saute for 2 minutes.
Keep on stirring veggie puree until oil separates from it.
Add cumin powder,sugar,salt,coriander powder in kadhai and saute for a minute.
Add water as per required consistency and cook for 5 minutes.
Add fried paneer cubes in kadhai and cook for another 5 minutes.
Garnish with fresh cream and serve paneer butter masala with roti / paratha / naan or rice.
