Khara puri recipe

Presenting crispy and crunchy type of puri, farsi delicacy ,yes its Khara puri. A perfect tea time snacks and ideal for kids “Choti bhuk (Small hunger food )”.
Khara puri is the type of puri( Indian bread) which is made using all purpose flour and spices like black peeper and jeera (cumin seeds). These spices can be powdered or used as slightly crushed. I like using spices slightly crushed in Khara puri as it tastes more crunchy.Khara puri is tasty, spicy in and it melts in the mouth too. It can be served with pickle, sauce or just as a tea time snacks. It has the good shelf life so can be carried while travelling also.
Weight watchers can use oil Instead of ghee while making dough for puri. While making Khara puri has to be pricked properly to get that perfect hardness or else it will turn into a soft puri. Try this  Khara puri for summer holidays for children, it surely will fill the stomach and keep them busy eating as well.
Maida (All purpose flour ) 2 cups
Semolina 4 tb spoon
Salt as per taste
Ghee 2 tb spoon
Black pepper 1 tb spoon  slightly crushed
Cumin seeds 2 tea spoon slightly crushed
Oil for deep frying
Water for kneading dough

Directions to cook:

1. Mix all dry ingredients except oil in all-purpose flour.
2. Heat ghee and pour it in above flour mixture.
3. Add water slowly in all-purpose flour mixture to knead firm dough for making puri. Adding more water may make dough watery so avoid it. Make sure dough is hard as its necessary for getting crispiness in khara puri.
4. Keep the dough aside covered with wet cloth for half an hour.
5. Heat oil in kadhai/pan for frying puri.
6. Roll small round shape puris by dividing kneaded dough into small portions. And prick all over puri using knife or fork.
7. Deep fry pricked puri in oil on low flame.
8. Drain oil and transfer puri to dry container.
9. Serve Khara puri with tomato sauce, pickle or any choice of chutney.
