Beetroot and carrot stir fry

Beet  root is rich in Iron, vitamin C and carrots are rich in vitamin A. Eating raw beet root and carrots in your salad regularly has many health benefits ,but sometimes we may get bored by eating normal salads.

Thats why for making it more tasty I thought of making less oil stir fry using these two nutritious vegetables.And it became perfect as a side dish for chapathi.I have started making this carrot and beet root stir fry as a side dish /accompaniment for my daughters lunch box.Its dry and quick to make in the morning for me.This stir fry can be stuffed in wheat dough to make beet root paratha.Your kids will love this colorful ans tasty beet root paratha.Check following recipe and make this healthy side dish beet root and carrot stir fry.

  1. Wash and cut stems of beet root. Grate beet root with grater and keep it aside
  2. Wash and cut stems of carrots.Grate carrots with grater and Keep it aside.
  3. Heat pan and add oil in it.
  4. Add mustard and cumin seeds in hot oil.As seeds start spluttering add asfoetida ,curry leaves and grated garlic in pan.
  5. Add grated beet and carrots in pan and saute mixture for a 2-3 minute .
  6. Add chili powder ,cumin and coriander powder in vegetables and mix well.
  7. Add salt and mix well. Cook vegetable mixture for 5-6 minutes.
  8. Switch off the gas and serve beet root carrot stir fry with chapathi.
