Dum aloo

Dum aloo is one of the special curries which i make occasionally or when i have guests at home.Its full of flavors and rich gravy cooked with some spices and baby potatoes.Dum aloo is generally served as a side dish with roti,paratha,naan or rice.

  1. Wash and boil potatoes and add some salt while boiling potatoes.
  2. Peel potatoes and prick them with fork .
  3. Shallow fry pricked potatoes with little oil in pan.
  4. Chop onions, tomatoes and crush garlic ,ginger to get paste.
  5. Dry roast spices cumin , coriander seeds ,cardamom, bay leaves and cinnamon stick.
  6. Grind roasted spices in grinder to get fresh spice powder.
  7. Grind onions , tomatoes and cashews in grinder to get fine paste.
  8. Heat pan and add oil in it.Add cumin and mustard seeds to crackle in hot oil.
  9. Add pinch of asafoetida and ginger garlic paste .Saute it for 2 minutes.
  10. Add onion and cashew paste in pan and saute for 5 minutes.
  11. Add ground spice powder, salt ,sugar beaten curd and saute for a minute.
  12. Add fried potatoes in pan and mix well sprinkle crushed kasuri methi on dum aloo curry.
  13. Add water as per required consistency in aloo curry.
  14. Cook dum aloo curry for 5-6 more minutes.
  15. Serve dum aloo curry with roti or rice.
