Bottle guard is nutrition rich in vitamin C, Zinc, Thiamine, Dietary fibres. I use bottle gourd mostly in curries. But my kids don’t like it and that’s why I started making dessert using it. It’s very simple recipe and tastes fantastic. My mother used to make carrots halawa and Lauki halawa(bottle gourd halawa) has similar recipe. When I tried it for first time it wasn’t perfect. But with few trials and error now I can make perfect dry dessert loaded with goodness of dry fruits. Interesting thing is my both kids love to eat this dessert and they hardly bother about the lauki in it. Roasting bottle guard is most time consuming step in this recipe. Bottle gourd needs to be roasted till all water from it evaporates. Water/ juice in bottle gourds can make dessert sticky ,which wont taste best. For garnishing sprinkle any choice of dry fruits and it will add crunch in dessert.

Instructions
  1. Wash and peel bottle gourd. Grate bottle gourd using grater.
  2. Mix saffron strands in little amount of milk and keep it aside.
  3. Heat pan and pour ghee in it.
  4. Once ghee gets hot add grated bottle gourd in pan and roast on low flame till all water from bottle gourd evoperates.
  5. Once mixture in pan is complete dry add sugar , full cream milk and saffron infused milk in pan and saute for 5 minutes.
  6. Cook bottle gourd halawa for another 10 minutes or till it becomes dry again.
  7. Switch off gas and sprinkle cardamom powder on halawa .
  8. Garnish with cut almonds , cashews and serve bottle gourd halawa.
