Today’s post is about  Nan khatai ( Butter cookie). It’s is famous type of cookie or biscuit generally used as tea time snacks in India. I am passionate lover of tea and this butter cookies is my favourite tea time snacks crisp outside and soft inside Nan khatai cookies are tasty and melt in mouth snacks.

Here in Singapore it rains most of the time and thus obviously  tea and snacks  are mandatory. I make nan khatai and use it for few days as it has good shelf life. It has different version recipes with cardamom ,dry fruits, chocolate, saffron. Interesting thing is that , this cookie doesn’t need egg for making it.As its shrawan month and many people don’t eat eggs, meat  during complete month you can try baking this egg less cookies.

I am posting  recipe of plain nan khatai recipe today .Try making  this easy recipe and you will love  its melt in mouth this crispy outside texture.For precautions while baking just keep eye on this cookies to avoid over baking and burning. Every oven has different settings and thus baking time varies for this recipe. Stop baking as soon as cookie starts browning.

  1. Powder sugar , cardamoms separately using grinder.
  2. Mix maida , semolina ,salt and baking soda in a bowl.
  3. Sieve above dry ingredients mixture.
  4. Mix ghee and powdered sugar in separate bowl and beat using hand mixer.
  5. Add maida and semolina mixture , cardamom powder in it and mix well to form dough.
  6. Preheat oven at 180 degree celsius temperature
  7. Grease cookie tray with ghee and keep ready.
  8. Make small balls of dough and press it little to form cookie like shape.
  9. Place all cookies in greased tray at some distance.
  10. Keep cookie tray in oven and bake for 15- 18 minutes on 180 degree temperature. Keep on checking in between if cookies turning brown.
  11. After baking let nan khatai cool down for few minutes and then store it in air tight container.
