Whenever we go to restaurant, we order at least one dish with paneer (Cottage cheese).Paneer curries are always rich in taste and make delicious combo with roti/chapatti or naan. I don’t prefer naan as bread in meal. As it’s made up of Maida and hard on digestion. Generally while eating outside many people prefer naan as their bread in meals. Naan are soft, tasty breads and taste absolutely delicious with paneer curry. My kids love to eat butter naan with any paneer curry.

Eating green vegetables is very important for health. But Sia don’t like any green vegetable and so I find ways to give greens with her favourite foods. No doubt Palak paneer is on top of the list. As its spinach cooked with her favourite paneer and she never refuse to eat it. Whenever I bring Spinach from the market I make this creamy, green and tasty gravy for her. I add as many greens as possible to make this spinach paneer curry. Add some fenugreek leaves while making this curry and you will love the different taste of spinach paneer curry.If you looking for ways to include more greens in your kids diet , go for this curry. Pour some fresh cream on top of curry and serve it ,I’m sure your kids won’t refuse to eat it.

Instructions
  1. Wash spinach leaves and add in boiling water.Blanch spinach leaves for 10 minutes and switch off gas.
  2. Puree boiled spinach leaves with some water to get puree.If fenugreek leaves are available make it's puree along with spainch. keep it aside.
  3. Shallow fry /deep fry paneer cubes with some oil in a pan. Keep it aside.
  4. Chop onions ,tomatoes ,garlic, ginger.Make paste fo ginger and garlic Keep it aside
  5. Grind onions and cashew nuts with water.Keep it aside.
  6. Grind tomatoes to get fine puree.Keep it aside.
  7. Heat pan and pour oil in it.Once it gets hot add cumin seeds and mustard ,asafoetida in oil to crackle.
  8. As seeds splutter add ginger garlic paste and saute for a minute.
  9. Add onion puree in it. Saute for 3 to 4 minutes.
  10. Pour tomato puree in pan and saute for 3 to 4 minutes. Keep on stirring veggie puree until oil separates from it.
  11. Add pureed green vegetables in kadhai and mix well.Let it cook for 3-4 minutes.
  12. Add cumin powder, turmeric,salt, coriander powder in vegeatble curry and mix well.
  13. Add fried paneer cubes in pan and mix all ingredients properly.
  14. Add enough water (As per required consistency) for cooking palak paneer curry .
  15. Cook palak paneer curry for another 4-5 minutes and switch off gas.
  16. Garnish it with coriander leaves and serve.
