When I think about any dish which is fragrant, spicy, colourful and full of flavours,  biryani comes first in the list.It’s my favourite one pot meal. Actually chicken biryani is extremely popular rice variety and it’s must have on special occasions/ festivals.Being vegetarian I cook vegetable biryani most of the times and sometimes paneer biryani for my kids.Paneer is full of proteins and thus I try to use it in as many dishes as possible.I make paneer biryani as a special meal on weekends as it needs more time to cook using step by step procedure.

For making Biryani you will need Basmati rice (Long grain fragrant rice as it has special aroma and taste), vegetables of your choice. And selected spices which are properly ground to make biryani flavourful and aromatic.Actually you can avail ready-made biryani masala available in the market but home-made spices             will make biryani more aromatic. It’s optional to use Rose water and kewara flavour but its better to use for more perfect results.Extra ingredient in paneer biryani is Paneer(Cottage cheese), which is marinated using curd and dry spices mixture.Marinated paneer tastes awesome and it can be used as an option to chicken :-). (Read it as – For vegetarian people like me).Follow step by step procedure using these  ingredients and delicious biryani will be ready. It  is served with raita (Any type of raita made using curd) , fried onions and Mirachi ka salan .Mirchi ka salan is another spicy curry specially made as an accompaniment to biryani.

  1. For making biryani masala: Grind bay leaf, cloves, black pepper, cardamom, and cinnamon stick in grinder to get coarse biryani masala powder. This dry masala powder can be stored in air tight container for many days.
  2. For marinating paneer: Grind ginger, garlic, chili, coriander leaves with some water in grinder to get paste.Mix curd, above paste, salt, turmeric powder in one bowl. Coat paneer cubes with it for marinating and Keep it aside for 1 hour.
  3. chop onions in to thin slices. And deep fry onion slices which will need for garnishing.
  4. Half cook basmati rice with 3 cups of water, salt to taste and 1 tea spoon of oil in open pan. Cooking in open pan avoids rice getting mushy. Remove it from flame before it gets cooked completely.
  5. For making biryani : Add marinade to heavy bottom pan and layer of cooked rice on it. Sprinkle fried onions and fried paneer cubes.
  6. Cover with tight lid on pan and cook for 6 to 7 minutes.
  7. Switch off gas and don't open lid of pan for another 10 to 15 minutes.
  8. Mix well and garnish it with fried onions .
  9. Serve paneer biryani with any choice of raita .
