Here we are with another lunch box idea for kids. Pav bhaji- dinner roll and mashed vegetables. it’s the most favourite dish of my both the kids. and they bring a clean lunch box whenever I give them pav bhaji. My kids eat it by making the burger of pav bhaji. For making bhaji/ curry in this recipe I use a variety of vegetables as it’s the perfect way to hide vegetables in their favourite dish. Generally, you can use any vegetables from the following list as per availability. (veggies – potatoes, cauliflower and carrots green peas, corn, beetroots.) Make sure to use all fresh vegetables for authentic taste. Today’s recipe I have used fresh corn kernels with other vegetables to make the curry of pav bhaji. (Sometimes I add beetroot as well.) You can add extra vegetables as per your choice.

I have used a pressure cooker to make bhaji curry. Making curry in pressure cooker not only save time but also makes vegetables perfect mushy. Pressure cook veggies for 3-4 whistles with water or till they get softly cooked. It’s the easiest option to make this curry. You can use instant pot as well. Then I have mashed the veggies using a potato masher. The curry needs special pav bhaji masala and I have used Everest spice. It is the combination of selected spices and it enhances the taste of pav bhaji.It is must-have in this recipe.I have used coriander and cumin powders as well. This curry needs to be cooked in butter only.

Regarding pav/ dinner rolls, you can bake it at home or buy readymade rolls from the store. I have used store brought dinner rolls. Roast the pav on the pan before serving.

Instructions
  1. Wash and chop vegetable Carrots, cauliflower, peas, corn kernels and potatoes.
  2. Pressure cook these vegetables for 3 whisteles using pressure cooker with enough water.
  3. Make giner and garlic paste.
  4. Wash and Chop onion and tomatoes.Boil potaoes and keep it aside.
  5. Heat pan and add butter in it.
  6. Once the butter melts add ginger garlic paste and saute.
  7. Add onions and saute it for 2 more minutes.
  8. Add chopped tomatoes and saute the veggies for 5 minutes or till tomatoes get mushy.
  9. Add cumin powder,coriander powder, chili powder and mix well.
  10. Add pressure cooked vegetables in the pan and mix well.
  11. peel and mash boiled potaoes and add in the pan.
  12. Mix all vegetables and cook for 5 more minutes.
  13. Add salt and pav bhaji masala in the curry.
  14. Pour water as per required consistency and cook urry for 15 minutes.
  15. Sprinkle chopped coriander leaves and serve pav bhaji.
  16. Heat pan and melt some butter on it.
  17. Cut pav in two slices and roast it on the melted butter.
  18. Serve pav with hot curry.
