Rava idli or instant idli is quick version of idli and needs only two main ingredients.As idli is one of the healthiest breakfast recipe i often make idli.But there are some times when i forget to soak rice and lentils for making idli.This is time when rava idli comes to rescue.This idli batter dosen’t need fermentation.Rava idli gets ready quickly and tastes like fermented batter idlis.It goes well with sambhar, any choice of chutaney.

Roast semolina on low flame for 8-9 minutes.
Let semolina cool down to room temperature and add curd in it.Mix well and set aside for 1 hour.
Heat oil in pan and add mustard and cumin seeds in it.
Pour this hot tempering in semolina mixture.
Add salt , soda and water as per idli batter consistency in semolina mixture and mix well.
Grease idli moulds with oil and pour this semolina batter in it.
Steam idlis for 15-20 minutes in steamer or idli cooker.
Serve rava idli with any choice of chutaney.
