Thai red curry

When I had Thai food for the first times years ago, I didn’t have an idea about the taste and flavours of it. But since then I have become biggest fan of Thai food and make sure to make it often. Along with vegetable spring rolls, pineapple rice I like Thai red curry very much. I’m in love with this Thai red curry and I made numerous versions of it using different set of vegetables. Being vegetarian i have used vegetables but chicken is used in it along with vegetables for making authentic thai red curry.

Initially when I made Thai red curry for the first time in my kitchen I wasn’t sure about the taste. I just followed the instructions of the friend and scrumptious curry got ready in few minutes. Cutting of variety of vegetables is the only difficult task for making this curry. Just have all ingredients ready and its easy to make. I have used home made Thai red paste for making curry but it can be bought from market as well.Try making this red curry for your weekend dinner and i’m sure it will be more special with this amazingly tasty and nutritious side .

  1. For making Thai red paste : Dry roast cumin seeds ,coriander seeds ,pepper corns and grind with water soaked Red chilies ,salt, garlic cloves.
  2. In heavy bottom pan add oil and saute finely chopped onions in it for 2 minutes.
  3. Add ginger garlic paste in onions and saute for a minute.
  4. Add chopped carrots capsicums ,couliflower and green beans in pan and mix all vegetables to saute for 4-5 minutes.
  5. Add thai red curry paste , salt and sugar and give a nice stir to thai red curry.
  6. Add can of coconut milk and mix well with mixture of vegetables.
  7. Add soy sauce and sprinkle some pepper powder for extra spicy taste.
  8. Adjust water as per required consistency and Cook thai red curry another for 5-6 minutes.
  9. Serve hot and delicious thai red curry with rice .
