Sandwiches are such versatile food used as a breakfast, snacks and meal.It takes only few minutes to make and serves perfect combination of nutrition and taste. Using whole wheat breads instead of white breads will make sandwich more nutritious.I like vegetable cheese sandwich for breakfast and I often make it for weekend mornings.This easy to make sandwich can be made using variety of vegetables like carrots ,cucumber ,onion ,tomato, lettuce, spinach, beet root. I use many vegetables discs to assemble vegetable cheese sandwich , so that kids will get more nutrition.

If your kid is picky eater then make these vegetable and cheese sandwiches and pack in your child’s lunch box.Grilling is optional in this recipe and when you are jiffy just cut the bread edges and  assemble sandwiches.It tastes good without grilling as well.I have used chedar cheese in following recipe, you can use any choice of cheese.

Instructions
  1. Wash and cut vegetables in circular shape thin slices.
  2. Apply butter on bread slices.
  3. Keep vegetables slices on the bread and sprinkle salt and pepper powder on vegetables.
  4. Sprinkle mozerella cheese on vegetables discs.
  5. Grill vegetables and cheese sandwiches in sandwich maker.
  6. Serve vegetables and cheese sandwich with ketchup.
