While making sweets at the festival, I always get confused. As there are various recipes for sweets, porridges to try, on my list. I try to make different porridge every time on the festive occasion. Last Sunday I made sago porridge, as kids wanted to have a sweet porridge. For making it needs sago or Sabudana or tapioca pearls. It’s very quick to make and tastes delicious. My kids like this porridge because of its ball-like texture. Sago is generally used as a fasting food.
For making this porridge, soak sago pearls in little water for 4-5 hours. The quantity of water for soaking is totally dependent on the type of sago you use. As there are the variety of sago pearls available in the market. I always use big sago pearls which need very less quantity of water while soaking it. In the following recipe adding saffron strands, ghee and milk are totally optional. You can avoid adding these ingredients and make porridge using only water and sago pearls. Adding choice of dry fruits would also enhance the taste. Sago porridge is a good option to give it to toddlers (at least 1-year-old) as it’s easy to chew. - Sago/ Sabudana 1 cup
- Milk full cream 1 cup
- Sugar 1/2 cup
- Ghee 1 teaspoon
- Water 1 cup
- Cardamom powder 1 pinch (optional)
- Saffron strands 2 (optional)
- Wash sago with water and drain all water from it.
- Pour little water and soak sago for 4-5 hours.
- Soak saffron strands in little milk to infuse.
- Heat pan and add water to it.
- Add soaked sago pearls in the pan and cook for 5 minutes.
- Add sugar, milk and mix all ingredients well.
- Pour saffron infused milk in porridge and cook it for another 6-7 minutes.
- Sprinkle a cardamom powder on sago porridge and mix well .
- Cook for another 5 minutes and switch off the gas.
- Serve sago porridge hot or cold.
